Enter this Apple Cider Fizz Mocktail.
It has all the flavor of a classic fall apple cider drink, but it’s cold, bubbly and refreshing enough for those warm early-fall days. Spiced apple cider gets a little brightness from fresh lemon juice, a little sweetness from your favorite fall syrup and plenty of fizz from club soda.
Best of all, the syrup is completely up to you. Ginger makes it spicy and fresh, maple leans into the fall vibes, and caramel basically turns the whole thing into a fizzy caramel apple.

This apple cider mocktail is essentially a sparkling version of your favorite fall cider. Instead of heating the cider with spices, you shake it with fresh lemon juice and syrup, pour it over ice and finish it with club soda.

Ingredients:
- 2 oz spiced apple cider
- 1/2 oz fresh lemon juice
- 1/4-1/2 oz your chosen syrup
- Club soda to top
Instructions:
- Add cider, lemon juice and syrup to a cocktail shaker filled with ice
- Shake vigorously for 15 to 20 seconds.
- Strain into two glasses over fresh ice.
- Top with club soda.
Garnish:
- Fresh apple slice
- Cinnamon stick
Which Syrup Should I Use?
This is where things get fun. You can make the exact same apple cider mocktail several different ways just by changing the syrup.
Ginger syrup: My original choice and one of my favorites. It adds warmth without making the drink overly sweet.
Maple syrup: Probably the easiest option since you may already have it in your kitchen. Use real maple syrup and start with a small amount.
Caramel syrup: If a caramel apple walked into a mocktail, this would be it.
Vanilla syrup: Softer and sweeter, with an almost dessert-like flavor.
Rosemary syrup: A great choice if you prefer your mocktails more herbal and less sweet.
Pumpkin spice syrup: Maximum fall. Enough said.
Brown sugar syrup: Richer than simple syrup and especially good with a heavily spiced cider.
Tips for the Best Apple Cider Mocktail
Taste your cider before adding the syrup. Apple ciders vary quite a bit in sweetness, and flavored syrups can be sweet too. Starting with 1/4 ounce lets you add more if you need it.
Fresh lemon juice also makes a difference here. This drink has very few ingredients, so that little bit of tart, fresh citrus does a lot of work.
And don’t skip the club soda. The bubbles aren’t just there for fizz—they lighten up the cider and keep the finished mocktail from tasting heavy or overly sweet.

Notes
- For an extra-spiced version, add a pinch of cinnamon to the shaker before shaking.
- Want something even lighter? Use equal parts apple cider and club soda and skip the syrup entirely.
